If you ever been to TacoBell, you know exactly what this is. If you haven’t, be prepared to be amazed.

Now I know this is an unorthodox choice for a feature given I just covered French-cut rack of lamb and this recipe is considered street food. But hear me out, SOUL food is exactly that. Food that speaks to you, makes you feel good, tastes good, and is comforting. Say what you will, junk food is comforting. But what happens when you don’t want to spend money? When you want the junk food without the junk? Solution: make it yourself.

I love making this, because I know all of the ingredients I put inside. I elevate the dish by using organic and higher quality ingredients, such as cheddar cheese and other non-processed cheeses. And my secret ingredient, veal.

Again, I know. I am not a fan of veal on its own. I find it to be very gamey, more so than than lamb. But in this recipe with the combination of all other ingredients you don’t taste the gaminess. Also, because veal is lean it makes an otherwise heavy dish that calls for beef, very light. You can also use ground chicken or turkey, but it doesn’t hold the seasoning as well. The seasoning holds better with beef or in this case, veal. Trust me, you’ll thank me later.
